There is no denying that I love a little spice in my life (No this post isn't R rated...keep reading) especially chili powder! So when I found this awesome recipe I knew I needed to add it to our meal plan. Ryan started out HATING this recipe but I just kept making it anyways and now he really enjoys it....hee hee, sneaky!
Here are the ingredients:
- 2 Chicken Breasts, chopped
- 1/2 onion
- Tortilla's (4)
- 1 can of cream of chicken soup
- 1/2 cup of sour cream
- 1/2 cup of Pace Pinacte Salsa
- Grated Cheese
- 3 teaspoons of Chili Powder
Instructions:
1. Cook chopped chicken, onion and 1 tsp of chili powder in frying pan until browned. * I have to chop the onion very finely so it is hid from Ryan *
2. In a medium sized bowl mix soup, sour cream, Pace salsa and chili powder until well combined.
3. In another medium bowl take half of the soup mixture and stir in the cooked chicken and onion. Add about 1/2 cup of grated cheese and stir until well combined.
4. Take this mixture (soup and chicken) and spread about 3 tablespoons worth in the centre of a tortilla. Roll up and place in greased baking pan.
5. Repeat until all the mixture is used up. For us it takes 4 tortilla's.
6. Pour remaining sauce over top of tortillas and top with more cheese.
7. Cover and refrigerate over night for supper next day.

Pretty simple but it does take some practise to get the exact amount of chicken mixture in the tortillas. Ryan tells me how much he HATES salsa. Little does he know that he is actually eating some in this recipe, no one tell him, ha ha! I'm glad Ryan has grown to enjoy this recipe as well because it has become one of my most favorite and cheapest recipes.

1/2 onion- $0.40
Tortilla's- $2.00
Cream of Chicken- $0.99
1/2 cup of sour cream- $1.05
Pace Salsa (1/2 Cup) - $1.16
Grated Cheese- $1.25
Total: $9.89

i'm confused - do you only use 1/2 the can of cream of chicken soup?
ReplyDeleteNo....you use a full can when you make the sauce. You take half of that mixture to mix with chicken and save the other half of the sauce for over top of the tortilla's. Sorry for any confusion!
