When My Man’s Away…

I secretly enjoy it!

Ok, I know…I’ve only been married for a little over 2 months and I’m already enjoying being apart from my
husband?

Yes, I am!

One of the best things about being married is being able to start and finish your days with your best friend. There is no body in this world that
understands me like Ryan does.

He knows my moods and what makes me tick.

Last week we had a little irrigation emergency on the farm. This required Ryan to pack up his bags on Friday afternoon and drive for 7 hours to pick up a replacement part.

This meant that we would be spending the night apart for the first time since we had gotten married and I hate to admit it but….

I was looking forward to it.

I had visions of a nice quiet night at home doing whatever I felt like. Going for a swim, organizing my closet, watching the girliest of girly shows, sleeping in our king size bed alone (GLORIOUS!) and making something I like to eat that I know he doesn’t.

Like this:

One thing that my dear husband and I can’t agree on is dessert. The man WILL NOT eat dessert unless it’s Jello.

I on the other hand, LOVE dessert. It brings me such
joy.
We’ve had battles over dessert because I just can’t understand how a human being only eats Jello as a
dessert!
That’s why last Friday when he was away I made DESSERT for SUPPER! And I laughed in the face of all that Jello sitting in my cupboard!

I pinned this microwave cookie recipe a while ago and knew I just had to make it.

Luckily, the ingredients are stuff you pretty much have on hand.

cookie 8

- 1 tbsp. butter, melted
- 1 tbsp. white sugar
- 1 tbsp brown sugar
- 3 drops of vanilla
- pinch of salt
- 1 egg yolk
- 1/4 cup flour
- 2 tbsp. chocolate chips

The recipe reads:

1. In a bowl mix your melted butter, sugars and vanilla and egg yolk.

2. Add in flour and salt. Mix until combined.

cookie 6

3. Add in chocolate chips.

4. Place dough into a small microwave bowl, ramekin, or cup.

Lindsay step: Good what a ramekin is and realize
you have one of those!

5. Microwave for 40-60 seconds or until the cookie looks done.

Holy simple supper dessert. After I was done microwaving I grabbed a big glass of milk, sat down with a little Say Yes To The Dress and dug in!

Yup, it’s pretty much as amazing as it looks! Pinterest success!

It really was the cherry on top of my perfect alone time evening!

Happy Friday!

  1. Oooh! Looks delicious! Big A is going away in a couple weeks for his Bachelor Party and I'm NERVOUS. I've never slept alone in our apartment. Or any apartment. I used to go home to my parents when my roommate stayed somewhere else. WAH!

  2. Mmmmmm, I'll have to make this with Sancia when I get home! I like to watch Y&R and have a long bubble bath and stay up late watching trashy shows on TV when Reg is away. Late is like 10:30 instead of 10:00 p.m.
