What Lurks In Your Hash Browns, Yuck!

**Hash browns and Home fries are the same thing in my household.*

Happy Friday everyone! It’s hard to believe the week is over! For once, that doesn’t make me happy! :-)

The other day I was cooking supper. Our supper that night, according to my meal plan, was breakfast!

Ryan and I love our breakfast for supper night. It’s a yummy alternative to the normal supper food and let’s face it, it’s cheap!

Our favorite items to have with our breakfast is usually bacon, eggs, home fries and toast. Sometimes we’ll switch things up and just have the bacon and pancakes (a personal favorite of mine!) but not very often.

I’ve always bought our home fries. They were cheap and I thought how can you frig up home fries? Well, don’t look on the reverse side of the package like I did one evening, Yuck!

Here are the list of ingredients on a bag of McCain diced home fries:

Potatoes, hydrogenated vegetable oil (canola and/or soybean and/or cottonseed and/or sunflower) with natural beef flavour (may contain wheat and milk ingredients), dextrose, sodium phosphate,wheat flour, rice flour, corn flour, cornstarch, modified corn starch, modified potato starch, salt, modified tapioca starch, tapioca and/or potato dextrin, degermed yellow corn meal, modified cellulose, autolyzed yeast, soy protein, corn meal, baking powder, onion powder, garlic powder, glucose solids, spice, xanthan gum, guar gum, caramel, annatto, colour, ascorbic acid.

I wish I was kidding….Unbelievable right?

Well, since that very day over 2 months ago I have not bought one bag of home fries or french fries!

I thought I’d share with you a simple way to make some homemade shredded home fries.

Ingredients:

- Potatoes

- Butter

- Spices to your taste (I use salt, pepper, paprika, and garlic)

Pretty short list compared to the one above, eh?

1. Pre heat your own to 350 degrees.

2. Take potatoes and pierce with fork all over. Place on a baking sheet. Place in oven for 30-40 minutes.

3. Allow potatoes to cool completely! In order to make sure my potatoes are cool enough I do the first 2 steps a day before.

4. Once potatoes are cooled take a cheese grater and start shredding!

Don’t even worry about that skin! It will literally falls right off!

5. At this point, after all the potatoes are all shredded you have two choices. One, you can take your pile of shredded potatoes and put them is a ziploc bag to go into the freezer.

Or, you can melt some butter in a pan and add your potatoes. Top with your favorites spices and fry until desired crispy-ness! The less you stir it around the more shredded it will stay!

6. Enjoy these shredded home fries with your breakfast or your breakfast-supper like we do!

Pretty east and simple right? And guess what? It’s CHEAPER then buying home fries in the store! Not to mention, in my opinion, the fresh ones that I make taste a million times better then the frozen variety! So, it’s a win-win situation for me!

  3. I make Swiss Rosti, one of our favourites that sounds very similar. We first had them in Interlaken Switzerland.

    3 potatoes, washed but not peeled
    1 cup shredded cheddar cheese
    1 egg
    pepper to taste

    Shred the potatoes using a cheese grater. Watch your knuckles! Mix in cheese and egg, mix well. Coat pan bottom with oil. Add the mixture and gently press down. On medium low, fry for 10 minutes or until brown. Cut in half and flip over. Cook other side until brown and cooked through. Can also be served with applesauce or sour cream. I like butter! If I am lazy I just grate a potatoe into a pan with a bit of burrer and skip the cheese and egg.
