Tex Mex Lasgna

It is finally Friday, my second favorite day of the week and I am tired! Bleh. It is so cold now and feeling like winter is approaching...ahhh.......

I am SOOOOOO craving some meat! Anything, chicken, bacon, steak....I'm drooling just thinking about it. I'm not really having a hard time finding meals to eat that are meatless, I just can't seem to feel satisfied without some meat! Maybe being the Irish, country girl I am so use to meat at every supper!


Sarah (Hi Sarah!) forwarded me this recipe way back when. I never had a chance to make it but thought this was the perfect week to make it since it is meatless and healthy. My only problem, I knew Ryan was going to hate it!

Here is the recipe:
Ingredients

2 cups of chopped onion
2 cloves of garlic, minced
1 1/2 cups chopped green pepper
(I didn't use peppers because Ryan hates them)
1 can undrained tomatoes
(I just used a can of diced tomatoes instead)
1 cup of Salsa
1 teaspoons of cumin
1 can (19 oz) black beans. Drained and rinsed
1 can (19 oz) red kidney beans. Drained and rinsed
12 6 inch corn tortillas or 8 7inch flour tortillas
1 1/2 cup of shredded Monetary Jack Cheese
2 small tomatoes, thinly sliced
(I didn't have any on hand)
Low fat sour cream (optional)
Spray a large saucepan with non-stick spray. Add onions, garlic and peppers. Cook and stir over medium heat until veggies are softened (about 5 mins).
Add tomatoes, salsa and cumin. Bring to boil. Reduce heat to low and simmer, uncovered for 10 minutes.

Stir in black and kidney beans. Remove from heat.
Grease a 13x9 inch baking dish. Spread 1/3 of your bean mixture over the bottom. Cover with half of the tortillas, overlapping as needed. Add half of your cheese.
Spoon another 1/3 of bean mixture on top of cheese, following by remaining tortillas and last of bean mixture. Sprinkling remaining cheese on top.

Cover and bake at 350 degrees for 30-35 minutes. Let cool for 10 minutes (if you can wait that long!) before serving. Garnish with tomatoes and sour cream if desired.

Let me just tell you, I love this recipe! I had leftovers on my lunch yesterday and it tasted just as good as the night before!! I devoured what was on my plate. Ryan on the other hand......well he looked like this while eating it.....
He did not like it at all although he did say if it has less beans and maybe some hamburger he might like it...score!! I was really happy that he actually tired it because when I first met him he wouldn't even of done that!! He is really learning to love new foods, but just not this recipe.
It was a super, inexpensive meal! I have 6 serving sitting in my freezer ready for lunches as well!
Here is the total cost breakdown:

1 can diced tomatoes - $1.43
1 brick of Monetary Jack cheese (half used) - $2.50
1 pack of tortilla's - $2.49
1 can Black beans - $1.17
1 can Red Kidney beans - $2.34
1 Salsa (1/2 jar used) - $1.43
1 onion - $0.80


Total: $12.16


That's a great price for supper for 2 people and then 6 lunches ready in the freezer! That's $1.52 per serving/meal!


I am so looking forward to Sunday where I can eat some meat again! It has been a lot harder then I thought but as of Sunday I can officially cross another one of the 101 list!

  1. EEWW - GROSS...I don't like beans like that...but glad you liked it and Ryan "somewhat" liked it.
    I am guessing that your bowels are working GREAT after eating this meal...not once but twice! Hahaha!

  2. That looks delicious, mmm, I think I'll add it to my menu list for one night next week.

    You could grind up half of the beans and all of the green peppers to suit Ryan, that way he won't know they are in there and he'll still get all the good stuff from them. Just a thought.

  4. Yea i like the chili beans but i don't like the black beans I don't think...or at least I work myself up to NOT like them maybe!

    Question for ya Linds...are you that "frugal" that you guys eat with plastic silverware...haha - see the pic of Ryan and his plastic spoon...haha - I was just wondering!

  5. This recipe is really flavorful Stace, you should give it a shot!! I definately has some "magical bean" reaction..ha ha But it was worth it.

    Ha ha Well I am that cheap we are using old silverware that mom gave me for free but that picture is from Hawaii. Ry was eating the rest of my pineapple ice cream and he hated it too! Figures..ha ha!

  6. That really sounds a lot like what Rachael Ray makes. She does use hamburger and just one type of bean (which I omit b/c I hate beans unless they are green) and then she also adds frozen corn :).

    Omit the beans and I'd be in :)
